Quick, Easy, Kid-Approved: Weekly Meal Plan {Week of 10/14-10/20}

Woo hoo!! It isn’t just me who has realized that meal planning saves massive amounts of time, energy, and MONEY!! AND- you guys made it blatantly clear that you want {and even NEED} me to start posting my quick, easy, kid-approved weekly meal plans again! So, rest assured my homeschool mama friends, your wish is my command. After all, my primary goal here at Life of a Homeschool Mom is to help you make the homeschoolin’ mama life just a bit easier…and if meal plans are one of the things that do that for you, then by all means, let’s do it!

As always, my meal plans have three main features:

  1. The meals are QUICK.
  2. The meals are EASY.
  3. The meals are KID-APPROVED…and y’all, I have some picky eaters in my house! If they’ll eat this stuff, I can guarantee you that most of your kids will too!

So, here is your Quick, Easy, Kid-Approved Weekly Meal Plan for this week:

Breakfast​ ​Suggestion

Pumpkin Butterscotch Pancakes– Y’all- these pancakes are SO good- I mean come on….pumpkin, cinnamon, and butterscotch chips…what’s not to love?!

These pumpkin butterscotch pancakes are to die for! I can't wait to make them for breakfast.

Lunch​ ​Suggestions

Healthy Egg Salad – at home lunch box idea!   My children LOVE lunchables, but they are definitely not the most healthy things available. But, this idea is one of our favorites because it gives them the fun of a lunchable and it makes me feel a bit better about them, too! If your children don’t like egg salad, you could definitely substitute for chicken salad, or hummus, or something like that!

Appetizer​ ​Suggestion

Crock Pot Hot Apple Pie Dip – If you’re look for a quick recipe of an appetizer, or something fun of your children…this is perfect for fall!

Dinner Main Course Meal Plan-

Monday – Instant Pot Potato Corn Chowder   – This is one of our fall and winter staples. It is comfort food at it’s finest- it’s even one that we will use on meatless Fridays {leave out the bacon, of course!}.

Tuesday – Instant Pot Mexican Chicken and Black Bean Taquitos  – Taco Tuesday- need I say more!! Switch it up a bit with these Chicken & Black Bean Taquitos!

Wednesday – One Pan Taco Rice Dinner  – Because one can never have too many taco-themed recipes, we are having two this week! This dish makes my heart happy because it only uses one pan!! You’ll love it too!

Thursday – Best Crock Pot Chili – Fall is Chili season! This is one of my favorite chili recipes because I like for my chili to cook all day and get all nice and flavorful..and the crock pot does just that!  

Friday – Instant Pot Stuffed Peppers  Have you tried making Stuffed Peppers in the Instant Pot yet? If not, you’re missing out! They come out perfect!! 

Saturday – Asparagus and cheese stuffed chicken   How do I get my children to eat asparagus? Stuff it in chicken and cover it with cheese!! Seriously, it works! This recipe is so simple, but yet so, so yummy!

Sunday – Shepherd’s Pie  Sunday is perfect for a comfort food dish like Shepherd’s Pie. There are so many different variations of shepherd’s pie, but this one is definitely my go-to choice!

Pumpkin Spice Snowball Cookies –  I’m so glad that fall is finally here so that I can make all of my favorite fall desserts! Have you tried my Pumpkin Spice Snowball Cookies yet? Oh my word. They just melt in your mouth…and I dare to you to try to have just one!

  2. I don’t have an instant pot. More crock pot or one-dish meals please!

    1. I’ll try- I’m an avid Instant Pot user though, so there are MANY of those! Most IP recipes can be adapted for the Crock Pot though!

  3. Thank you for the meal plan with dishes from both the crock pot AND instant pot … looking forward to trying all of them with my family! Only wish there was a weekly grocery list to go along with all these recipes. (Hint, hint 😉)
