Homeschooling your kiddos has its pros and cons, just like every other decision that you make with your family. One thing for sure is that homeschooling does not necessarily mean that life will be easier. Planning lessons and doing school work alone can be stressful, so why not make your homeschooling days a little easier with these ten easy lunches, so you will have one less thing to worry about. Maybe your children are tired of having the same things for lunch day after day. Introducing a few of these new lunch ideas into your lunch rotation will give you extra “cool mom” points…the best part is many of these recipes can be made by your children with very little supervision. That is definitely a mom-win!
1- Breakfast Casserole
Breakfast for lunch? Why not? Many breakfast casseroles can be prepared a day ahead of time, and stored in the refrigerator until they are ready to be warmed up, and eaten the next day. This Bacon, Broccoli, and Cheese Strata looks delicious and will be added to our meal rotation asap!
2- Pizza Quesadillas
Allowing your child to top their tortilla with their favorite pizza ingredients is a great way to add a little extra fun on those really tough days. My girls love to use the Sun-dried tomato tortillas and top them with marinara sauce, mozzarella cheese, and pepperonis!
Whether you prefer the ease of canned soups, or the fresh goodness of a homemade broth that you’ve previously made, soups and sandwiches make a delightful pair. For an extra easy meal, toss your ingredients into the crockpot during breakfast, and allow them to heat until lunchtime. Our family especially loves this Instant Pot Ground Beef Pasta Fagioli soup recipe! It’s SO quick and easy!
Peanut butter and jelly sandwiches are simple enough to make on a daily basis, but to really save yourself some time and stress, make up a bunch ahead of time, and toss them into the freezer. Pull them out at breakfast time and they will be thawed in time for lunch! This is an easy one too because most people, especially kids, love PB&J. Plus, it’s an inexpensive meal that will leave your kids full.
5- Fettuccine Alfredo
This can be as simple as boiling a box of fettuccine and warming up a jar of Alfredo sauce, to top your pasta. For a little extra oomph, sprinkle in some garlic powder and italian seasonings into your sauce. Add a bit of protein by tossing in some previously grilled or sautéed chicken!
Smoothies are a great way to change up your routine. They can be made quickly, and you can add as few or as many healthy ingredients as you desire.
7- Homemade Lunchables
What kiddo doesn’t enjoy a lunchable? The best part is that if you prepare them the day ahead in compartment containers, you don’t even have to worry about them getting soggy. Ideas include sandwich meat, crackers, cheese, pepperonis, pretzels, hummus, pita chips, vegetable sticks, etc.
8- Egg Salad Sandwiches
When boiling eggs for breakfast, make sure to boil a few extras, so that you can whip up a quick egg salad for today or tomorrow’s lunch. I really LOVE this Instant Pot Sweet & Spicy Egg Salad recipe!
9- Sandwich Kabobs
Put a spin on your everyday sandwiches by ditching the bread, and slicing your ingredients into squares. Then just slide them onto skewers. Voila! Your little ones will think you are the coolest mom ever!
10- Grilled Cheese Sandwich
The wonderful thing about grilled cheese sandwiches is that they are incredibly fast to make, and you can add extra ingredients, to make them a little more filling. Think about tossing in a few slices of lunch meat for a little extra protein! One of the best things I’ve ever tasted was a traditional grilled cheese stuffed with barbecue pulled pork! Try it, you won’t be surprised!
