Instant Pot Buffalo Chicken Pasta

This Instant Pot recipe is simple and tastes totally delicious. It’s one of those recipes that you’ll want to keep on your radar for many, many meals to come. Being able to use your Instant Pot and cook a delicious meal with ease is so awesome! Not only does this dish offer great flavor, but it adds in a little bit of heat as well.

Ingredients for making this Instant Pot Buffalo Chicken Pasta

  • 2 cups shredded Rotisserie chicken
  • 7 oz Penne pasta
  • 1 cup Ranch dressing 
  • 1 1/2 cups Chicken broth
  • 4 oz Cream cheese, softened
  • 1 cup Milk
  • 1 cup Frank’s Red Hot Buffalo Sauce
  • 2 Jalapeños diced, seeds removed 
  • 1 1/2 cups 3 Cheese blend Mexican cheese
  • 2 tbsp Green onions chopped
  • salt and pepper to taste

HOW TO MAKE THIS INSTANT POT CHICKEN RECIPE

  • Remove and shred the chicken off the bones. Set to the side.
  • Coat chicken with 1/2 cup hot sauce. Stir to combine.
  • Place the chicken in the Instant Pot.
  • In a medium bowl mix together cream cheese, ranch, 1/2 cup hot sauce, until creamy.
  • Mix in shredded chicken.
  • Pour in pasta to the pot, 1 1/2 cups chicken broth and place chicken mixture on top do not stir.
  • Place on manual high pressure for 4 minutes.
  • Do a quick release.
  • Stir and remove the pasta and place the pasta mixture in a baking dish with shredded cheese on top.
  • Cover with foil.
  • Place baking dish in the pot. Place on manual high pressure for 1 minute. Do a quick release. {You could also set the baking dish in your oven for a few minutes to melt the cheese if your baking dish won’t fit in your Instant Pot.}
  • Stir to combine.
  • Garnish with green and onions and more cheese.
