I don’t know about you, but when that cold weather starts to hit, I’m ready for soup. It’s almost instantaneous, really. If the temperature dips below 60, you can bet that I’m already planning on what soup I’m going to be making for dinner.

This year, once Winter hits, I’m ready. I cannot wait to make this Instant Pot Beef Stew for me and my family. It’s hearty, it’s packed full of meat and veggies and it just makes me want to eat a giant bowl and snuggle up with a good book in front of the fireplace.

And honestly, what’s wrong with that? Nothing. Fuzzy socks and warm soup is what it’s all about! If you haven’t tried to make a soup or stew in your Instant Pot, this is the perfect recipe to give it a try!

It literally can’t get any easier than this recipe because honestly, the Instant Pot does the majority of the work for you! You can get warm and toasty by the fire, while the Instant Pot cooks your stew. Sounds like a perfect plan for a cold, winter evening, right?

Ingredients for Instant Pot Beef Stew

  • 1-2 pounds stew beef cut into 1” cubes
  • 2 tablespoons flour
  • 3 tablespoons olive oil divided
  • Salt and pepper
  • 1 tablespoon butter
  • 2 tablespoons diced garlic
  • 1 small diced onion
  • 1/2 cup diced celery
  • 2 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1/4 cup soy sauce
  • 1-2 tablespoons dry mustard
  • 2 tablespoons Italian seasoning (optional)
  • 2 tablespoons tomato paste
  • 1 packet of Beefy Mushroom soup mix
  • 6 russet potatoes cut into 1” cubes
  • 1 bag of frozen mixed vegetables

How to make Instant Pot Beef Stew

  • Add beef to a small bowl and add 1 tablespoon oil and mix with beef. Add flour and salt and pepper and toss to coat beef.

  • Set Instant Pot to sauté function.
  • Add butter and remainder of olive oil and allow to sizzle. Add garlic, onion, and celery and cook 2 minutes, stirring occasionally.

  • Add beef and brown, but do not cool all the way through.

  • Add beef stock, Worcestershire sauce and soy sauce.
  • Add soup mix, dry mustard, and Italian seasoning.

  • Add mixed vegetables.

  • Add potatoes and stir to combine ingredients.

  • Set Instant pot to Beef function for 35 minutes. Make sure venting is turned off and close the lid. Allow pressure to release naturally for 15 minutes. Release remainder of pressure by venting Instant Pot.
