Cold weather means soup time in my mind. Once that temperature drops below 70 degrees, I can’t wait to start digging out all my soup recipes and making them. This year is the year of Instant Pot in my house, so this Instant Pot Ground Beef Pasta Fagioli Soup has already been on my radar.

It honestly doesn’t get any easier than cooking with an Instant Pot. It’s quick, it’s simple, and each and every time the food comes out perfect. I’m not necessarily one of those “set it and forget it” type cooks, but my Instant Pot definitely gives me a bit of leeway to multi-task when using it.

When I’m craving a good and hearty soup, this Instant Pot Ground Beef Pasta Fagioli Soup is the one that I turn too. It’s full of meat, pasta and downright delicious ingredients that I just honestly can’t say no to.

I can assure you that leftovers always taste great, but honestly…when we make this, there aren’t any left over at all!

Ingredients for Instant Pot Ground Beef Pasta Fagioli Soup {scroll down for a printable recipe card}

  • 1 pound of lean ground beef
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon minced garlic
  • 1 small diced onion
  • 3 cups beef broth or stock
  • 1 cup tomato sauce or soup
  • 1 cup chopped celery
  • 1 cup diced red bell pepper
  • 1 cup diced yellow or orange bell pepper
  • 2 cups chopped carrots
  • 1 can of kidney beans rinsed and drained
  • 1 cup ditalini pasta
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon salt and pepper

 

How to Make Instant Pot Ground Beef Pasta Fagioli Soup

Step 1: Set Instant pot to sauté function.

Steps 2-4: Add olive oil, garlic, and onion. Cook until garlic is fragrant, and onion is translucent; about 2 minutes.

Steps 5-6: Add ground beef. Cook until no longer pink, stirring regularly. Drain grease and return to pot.

Steps 7-8: Add tomato sauce or soup and broth.

Steps 9-12: Add celery, carrots, and peppers.

Step 13: Add beans to mixture.

Step 14: Add pasta

Steps 15-17: Add seasonings and mix everything together.

Step 18: Set Instant Pot to high pressure and set cook time for 15 minutes. Make sure venting is off. When the timer goes off, allow to vent naturally for 15 minutes. Release any remaining pressure.
