There’s just something about Dr. Seuss books that I still love and remember as a child. And now that I can share those books with my little ones makes it even more special! Reading and seeing illustrations in all the books still brings a smile to my face.

Who doesn’t love the craziness that happens page after page in “Wacky Wednesday”? Or what about the shenanigans that the Cat in the Hat seems to always get everyone to do. And did he really ask your mother if she minded…? The verdict is still up on the air on that one.

One thing that we like to do in our home is read together and bake together. This easy recipe makes that super simple to do since the focus just happens to be on the most popular kid’s books ever!

If you’re looking for a fun way to spend time together with your kids in the kitchen, these are the cupcakes for you. Plus, they make a really great addition to a fun Dr. Seuss birthday party as well! The options are endless on how you can make, decorate and enjoy these delicious Dr. Seuss cupcakes!

Ingredients for Cat in the Hat Cupcakes

  • 1 box white cake mix
  • 1 small box strawberry gelatin
  • 1 tub whipped topping
  • 15 bananas
  • 3 pounds of strawberries
  • Toothpicks

How to make Cat in the Hat Cupcakes

  • Preheat the oven according to the cake mix instructions and line a mini cupcake can with red and white cupcake liners.
  • Make cake mix according to package directions.
  • Separate the cake mix evenly into two bowls.
  • Add the strawberry gelatin to one bowl and stir to combine.

  • Spoon a teaspoon of plain white cake mix into each cupcake liner. Tap the pan on the counter to make sure the cake mix is even.
  • Spoon a teaspoon of strawberry flavored cake mix on top of the white cake mix in each cupcake liner.
  • Bake the cupcakes according to the package instructions. Remove from oven and allow to cool completely.
  • Top each cupcake with a small dollop of whipped topping.
  • Assemble the Cat in the Hat cupcake toppers by slicing all the strawberries and bananas into evenly thick slices.

  • Then, stack the fruit, alternating between bananas and strawberries, on a toothpick. Be sure to leave half of the toothpick exposed on the bottom.

  • Assemble the cupcakes by sticking the toothpick into each cupcake.
