How is your meal planning going? Are you sitting down for a few minutes each week to plan your weekly meals? If not, I’m here to help you with my quick, easy kid-approved weekly meal plan!
If you are taking the time to plan your meals, it’s amazing how much more peaceful the week is as busy moms. However, it’s easy to get side tracked with all of the disruptions and distractions.
As I’ve mentioned in previous posts, I designate a day to prep for each week. I prep on Sunday and go grocery shopping to confirm all ingredients are on hand. Meal planning is key to a successful and productive week!
With that said, let’s move forward my friends and get ready for the week! Here is my quick and easy, kid-approved meal plan for this week, January 21st.

Monday – Reuben Stromboli has your typical classic Reuben sandwich taste, but with a twist and only 5 ingredients!
Tuesday – Instant Pot Mexican Chicken and Black Bean Taquitos is super easy to make in your Instant Pot! My mouth is watering just thinking about how yummy this recipe is!
Wednesday – Simple One-Pan Sausage Pasta is a crowd pleaser and a Mom pleaser when it’s time to clean up the dishes — just one pot, moms! You’re welcome.
Thursday – Crockpot Cheesy Cowboy Potatoes Don’t let the recipe title fool you — this is a full meal deal, my friends! The four main ingredients are seasoned ground beef, taters, cheese, and onion.
Friday – Instant Pot Meat Loaf– YUM! Meat loaf is one of my husband’s favorite meals, but this recipe takes the cake. It’s quick, easy AND you can cook your vegetables and meat loaf in the same pot! Double score!
Saturday – Crock Pot Chunky Beef & Potato Stew is not only is this SUPER easy to make in the crock pot, it gets better the longer it cooks.
Sunday – Chicken Taco Burger with only 3 ingredients, making this burger is a breeze! And, it has just a little kick to it but not too much for your young ones.
How about some side dish suggestions? Here are a couple of my favorites:
Carrot Cake Waffles you are going to love the Maple-Walnut Cream Cheese Frosting! Wow, it’s amazing!
Easy Shrimp and Corn Fritters this is a warning — these are slightly addictive!
Cheesy Pizza Skillet Dip this snacker could really be a meal in itself — add some meat and peppers and you’re good to go!
Instant Pot Baked Beans is a quick dish and most ingredients will be right in your pantry.
The Best Southern Pimiento Cheese will surprise you how easy it is to make.
Instant Pot Pecan Pie Cheesecake all I can say is it’s delicious and you’ll have the family coming back for seconds!
