Quick, Easy, Kid-Approved: Weekly Meal Plan 10/29

Wow! Last week was so much less stressful for me because I had our dinners all planned out from the very beginning of the week. I prepped on Sunday and made sure I went grocery shopping and had all necessary ingredients on hand. It was such a relief to use my weekly meal plan. Meal planning is key!

Let’s keep that momentum rolling and jump right into my quick, easy, and kid-approved meal plan for week 2! This week is full of some of our family favorites including a delicious pizza chicken bake!

Monday – Instant Pot Italian Stuffed Peppers This recipe is SO delicious- even if one of my children dumps their filling out of the pepper. It’s done in 45 minutes!

Tuesday – Shortcut BBQ Stew this is fall food at it’s finest! A delicious stew that uses rotisserie chicken, yum!!!

Wednesday – Slow Cooker Creamy Chicken Spaghetti  If you’ve never had chicken spaghetti this slow cooker recipe will have you hooked! One of my children asks for this recipe weekly. It is that good!

Thursday – Bang Bang Shrimp with Pasta – Even though I’m not a fan of spicy foods, this bang bang shrimp pasta is an exception to the rule. It has *just enough* heat. You can always adjust the spice level to taste!

Friday – Taco Ranch Chicken Chili Chicken chili? Yes, please! This pot of deliciousness can be made in your slow cooker or Instant Pot. I’ve tried both ways and you really can’t go wrong!

Saturday – Pizza Chicken Bake Change up pizza night with this delicious recipe! I love to serve it over spaghetti to give it a chicken parmesan feel, but it’s totally good by itself!

Sunday – Family Favorite Meatloaf Meatloaf is a family favorite around here. I love fixing it on Sundays. There is just something about that Sunday family dinner. This recipe is very similar to the one that I use except I add cheese to mine.

How about some side dish suggestions? These are a couple of my favorites: 

Pimiento Cheese Hush Puppies – I first tried these in Charleston, SC…and I was instantly hooked. I was convinced I could never make them and get them to taste the same, until I found THIS recipe! I love to dip them in homemade ranch dressing. You have to try it!

Butter Crumb Asparagus. I’m not a huge asparagus fan, but this recipe makes me consider changing my view on it!
