Pumpkin Spice Snowball Cookies

Snowball cookies aren’t a new recipe, but typically they are more common around the winter months. (Snowball…get it, right?) But now, with this Pumpkin Spice Snowball Cookie recipe, it can be your new favorite Fall treat. ‘Tis the season for everything pumpkin so get it started right with these flavorful desserts!

Simple to make and great flavor, making these cookies is an absolute breeze!

Ingredients for Pumpkin Spice Snowball Cookies

  • 1 cup (2 sticks) unsalted butter, softened to room temp
  • 1/2 cup + 1 cup confectioners sugar, divided
  • 1 1/2 tsp. pure vanilla extract
  • 2 1/4 cups sifted all-purpose flour
  • 1/2 tsp. kosher salt
  • 2 tsp. ground cinnamon, divided
  • 1/4 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. allspice
  • 1 cup finely chopped pecans

How to make Pumpkin Spice Snowball Cookies

  • Preheat oven to 375 degrees F and line two large baking sheets with parchment paper and set aside
  • In the bowl of a stand mixer, beat together softened butter, 1/2 cup confectioners sugar, and vanilla extract until smooth
  • Add in all-purpose flour, salt, 1 tsp. ground cinnamon, ginger, nutmeg, and allspice and beat until a soft dough forms
  • Fold in chopped pecans
  • Use a cookie scoop to scoop dough onto prepared baking sheets

Pumpkin Spice Snowball Cookies

  • Bake for about 8 minutes and let cool slightly
  • Whisk together 1 cup confectioners sugar and 1 tsp. ground cinnamon in a shallow bowl and roll cookies in sugar mixture
  • Place cookies on a wire cooling rack and let cool completely
  • If needed roll cookies in sugar mixture again, as the heat from the cookies can sometimes melt the sugar
