Everyone (and I mean EVERYONE) will love this dessert. Why? Because honestly, it’s not like anything that they’ve ever tasted. It’s light, airy and sweet and yet somehow, is the perfect addition to any meal.

You know how people love to have an after-dinner mint? Well, this cake recipe will now let them have an after-dinner cake dessert instead!

Ingredients To Make Peppermint Icebox Cake

  • 2/3 of a pound of Vanilla Wafers
  • 3 tablespoons of Melted Butter
  • 1 and 1/2 pints of Whipping Cream
  • 1/2 of a pound of Small Marshmallows
  • 3/4 of a cup of Pecans
  • 8 sticks of Peppermint Candy

How to make Peppermint Icebox Cake

Start by either rolling your vanilla wafers with a rolling pin or placing them in a food processor.

Mix with melted butter, until (wet sand consistency) and press mixture into the bottom of a 9×13 inch pan to form a crust.

Peppermint Icebox Cake

Whip your cream with a hand mixer until peaks form and it becomes stiff.

Add in marshmallows, pecans, and peppermint, and fold into whipping cream until well blended.

Pour mixture into the pan and smooth out.

Add any leftover wafer crumbs, pecans, and peppermint to the top if you wish.

Place in freezer and freeze for 3 hours.
