21-Day Fix Chipotle Burrito Bowl Recipe

If you have been following me on Instagram, you know that I have recently been making some changes in my life….specifically in my health. I am currently on Day 9 of the 21-Day Fix and I am absolutely loving it. Is it hard? Harder than I even imagined. Am I excited to press play on that DVD everyday? Nope. But is it worth it? Yes. Yes. A million times YES! I am combining the healthy eating and exercise plans of 21-Day Fix with a couple amazing products from Plexus and I feel like a new person!! More about that in another post though…

Today, I want to share a wonderful recipe with you that is 100% healthy, clean AND absolutely delicious!! If you’re following the 21-Day Fix plan, this recipe is plan approved!

My family LOVES Chipotle. What I don’t necessarily love are some of the ingredients they use and the expensive price tag that often comes with eating out. This copycat Chipotle Burrito Bowl recipe is sure to be a hit in your home! It includes that same cilantro lime rice that we all know and love….but has a few modifications to step up the health benefits while still giving you that taste you’ve been craving!

21-Day Fix Chipotle Burrito Bowls

21-Day Fix Chipotle Burrito Bowls

Ingredients:

  • 4-6 boneless, skinless chicken breasts, thawed
  • 3 tbsp extra virgin olive oil
  • 3 tbsp taco seasoning
  • 2 cups long grain brown rice, uncooked
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 1/2 limes
  • 1/4 cup cilantro, chopped
  • homemade guacamole
  • homemade fresh salsa
  • 1 cup shredded cheddar cheese
  • greek yogurt

Directions:

  1. Marinade chicken in olive oil, taco seasoning, and juice from 1/2 lime for at least 20 minutes.
  2. Grill chicken until done.
  3. While chicken is grilling, prepare rice according to directions on the package.
  4. Warm corn and black beans.
  5. When rice is finished cooking, add juice from 1 lime and 1/4 chopped cilantro to rice and mix well.
  6. Serve in individual bowls in the following order: bed of rice, black beans and corn, grilled chicken, and top with your choice of: shredded cheddar cheese, guacamole, salsa, and greek yogurt.

21-Day Fix container count:

  • Fill one yellow container with rice.
  • Fill one yellow container with mixture of beans and corn.
  • Fill one red container with chicken.
  • Fill 1/2 purple container with salsa.
  • Fill 2 blue containers with guacamole and cheese. {I only use 1 blue, so I do half a container of guacamole, and have a container of cheese}.
  • 2 yellow, 1 red, 1/2 purple, 2 blue
