One of my favourite treats during the holidays is gingerbread cookies, but I was recently shocked to learn that a good friend is not a gingerbread fan.
Now, this wouldn’t normally be a problem… except I was serving her a gingerbread cookie at the time! I had to come up with a fun twist that would quickly convert my friend to the gingerbread fan camp, and I think this Gingerbread Ice Cream Sandwich did the trick!
First, get your supplies:
- Loaf pan, or deep, lipped baking pan
- cookie cutter or ice cream scoop
- favourite ice cream
- 2 gingerbread cookies
- wax paper
I used two gingerbread men made with my fail-proof gingerbread cookie recipe to make this Gingerbread Ice Cream Sandwich, but if you’re in a pinch, you can always use a good quality store-bought gingerbread cookie.
First, line the loaf pan with wax paper, and then empty the ice cream into it.
Smooth the ice cream into an even layer and refrigerate until completely frozen. (As it likely melted a bit while you were smooshing it.)
Working quickly, remove the ice cream from the freezer, and use the same shaped cookie cutter as your chosen cookies (or the scoop if using store-bought gingerbread cookies) and cut out ice cream shapes.
I left my ice cream in the pan for this and used a spoon to remove the cut-out shapes, but if you remove the wax paper from the pan, you can push your shapes off from the underside of the wax paper. Whatever is easiest for you!
Place one cookie with the flat side up, and line the ice cream up to match the shape. Top with the second cookie.
If you’re enjoying immediately (and really, why wouldn’t you), smoosh the two cookies closer together and enjoy!
If you are making these Gingerbread Ice Cream Sandwiches ahead of time, wrap each cookie loosely in wax paper and store in a sealable container in the freezer.
