After the busy holiday season, many of us look forward to enjoying warm comfort winter foods, but we also have healthy-eating New Year’s Resolutions to keep and we don’t want to spend hours in the kitchen!

These simple meal ideas are perfect for leaving plenty of time to snuggle up and linger over a great wintertime book with the kids! (My family’s favorite wintertime read-aloud is Mr. Popper’s Penguins.)
